So with chicken fried steak, it’s all about the breading. Uh, and Lucille’s is known for their best breading. Uh, I can’t tell you the recipe. They won’t even tell me the recipe. It’s been lost. Uh, not actually, they still have it, but…

Welcome everyone to Campus Eats. We are here at Southwestern, uh, Oklahoma State University. I’m here with my boy, Ethan. Goin’ into your junior year, right? Yes, sir. All right. And we are here at where? Lucille’s Roadhouse. The, I mean… And Lucille, the history behind this place is insane, right? Yeah, it is. It’s, um, she’s considered the mother of the Mother Road, because it was, her original establishment was right on Route 66.

And it was this little gas station. She raised, like, five kids in, like, a couple rooms upstairs of this gas station. Yeah. And as, you know, people were heading west for jobs or what have you, they would stop by for gas, but a lot of ’em were, like, running out of money. So she would like- Yeah … trade, like, a couch for a tank of gas.

Unbelievable history. And, um, fortunately, one of the, one of the local businesses here really wanted to preserve it. So when she passed away around 2000, they bought that property, and they started building up different businesses around here. A gas station. Yeah. They rebuilt a restaurant really in her honor.

Just preserve the legacy of who Lucille was and Route 66. So anyway, now, let’s get to the good part. What is in front of us? Chicken fried steak. Ethan, take it away. Tell me what, what… I mean, this is, like, the state meal or what? Yeah. So the Oklahoma state meal is, uh, chicken fried steak, mashed potatoes.

There’s so much more in it. I had to, I couldn’t remember, so I had to pull it up on my phone here real fast. Okay. And this is the official state meal? Yeah, the official- Which I’ve never heard before, but- The official state meal of Oklahoma. So it’s barbecue pork, uh, the main dish, the chicken fried steak, sausage with biscuits and gravy, uh, fried okra, squash, grits, corn, black-eyed peas, and cornbread.

Does anyone eat that- So- … like, all together at the same time? I don’t know. I mean, I think I could. Okay. I haven’t yet, but I think I could. I might try that sometime. Okay. But, um, y- so it’s the state meal. It’s the, it’s the quintessential, like, this is where southern fried steak began. But this is supposedly the best of the best.

Why? Uh, so with chicken fried steak, it’s all about the breading. And Lucille’s is known for their best breading. I can’t tell you the recipe. They won’t even tell me the recipe. It’s been lost. Uh, not actually, they still have it. But what they did tell me is they use ranch dressing, so. Oh, in the breading.

In the breading, yeah. And it’s super cool. When they make it, we were in the back where they were making this. Mm-hmm. And they’re taking the beef steak. Yeah. Throwing it in that special breading. Oh. Then it’s going into buttermilk. Yeah, yeah. Then it’s going back into the breading, and then going into the fryer.

Oh, yeah. And this is as good as it gets, huh? I guess so. Should we dig in? I don’t see why not. All right. Yeah. Well, first of all, thanks for giving this dish to The College Tour. Yeah, catch that fork there. And let’s try this chicken fried steak. Oh my gosh, how good. Look at that gravy too. Oh, yeah. Oh my gosh.

Maybe if I can get a piece cut off.

That is amazing. The breading’s so crunchy, so much flavor. And now that you told me about the- Mm-hmm … the ranch, I think I can taste it in there. That’s pretty awesome. Really? I think so. Well. Hey, thanks a lot. When you come to Southwestern Oklahoma State University, Weatherford, Oklahoma, an amazing community.

And I think what’s cool about this is just businesses getting behind the history of a restaurant, preserving that legacy. Yeah. And you’re seeing that tied in with the, you, you know, with the university. Yeah. And it’s just really one big family and community here.
